Enter, our two new red-wine barrel aged beers, Morello Stout and Morello Red.
Initially we fermented with a mixture of Belgian Trappist yeasts and our house souring cultures. After primary fermentation, we added Morello cherry to some recently emptied French red wine barrels. The barrels were then tucked away in the brewery for 18 months to rest.
18 months later it was the moment we had been waiting for.
